As spring has arrived I would like to share my new go to sweet breakfast. I’m totally obsessed with this food combination at the moment – it literally tastes like summer to me, is very easily put together and very satisfying!
The base to this bowl are mixed oats, I like to create a mixture out of whole wheat oats, whole wheat oats flakes and regular oats. Oats contain a high amount of protein (14 g / 100 g ) and complex carbohydrates – providing energy for the day and keeping you satisfied for a long time.
There are some great premixed Müslis – just make sure they contain pure oats, nuts and dried fruit but no added sugar or oil.
Blueberries and bananas contain simple carbohydrates – easy to digest for the body – providing energy right away. Also blueberries are rich in vitamins A, C, B 6 and antioxidants – important for anti aging in cells.
Cashews and dried coconuts contain healthy fats (omega-6 fatty acids and polyunsaturated fatty acids) and also give the bowl a nice crunch. Furthermore adding a decent amount of fat to meals increases the saturation of a meal – having a balance between fats, carbohydrates and protein.
Ingredients for 1 bowl:
- 40 g mixed oats
- 1 banana
- 120 g blueberries (fresh or frozen)
- 100 g plant yoghurt
- small handful of cashews and shredded dried coconuts
- 200 ml of plant milk
Cut the banana in small slices, mix everything together and enjoy!
