Quark is a typical German milk product – comparable to a mixture of yoghurt and cream cheese.

It’s low fat and high in protein.

In this recipe Quark is used to make a healthy and quick version of cheesecake for summer.

1000 g Low fat Quark

200 g Cottage Cheese

4 eggs

80 g soft wheat semolina

100g sugar or 4 tbsp. Stevia

250 g cherries

1 tsp. baking soda

20 g Vanilla sugar


Preheat the oven to 175 °C.

Add all ingredients into a big bowl, mix well and pour the cake dough into a round cake pan.

Bake the cake for around 80 minutes until the top start to become a little brown.

I prefer the cake after it was in the fridge for a night 😉
