Avocado creme on freshly baked bread is an absolutely delicious breakfast and I like to prepare this dish for brunch on weekends.

As bread base I used fresh Spelt Bread (Recipe here) but changed the recipe by adding 150 g of walnuts to the dough and 50 g of pumpkin seeds on top of bread before baking it.

The walnuts give the bread more flavor and the pumpkin seeds turn crunchy from baking.

For the avocado creme just mash 2 avocados until they reach a creamy consistency, add the juice of one freshly squeezed lemon and as much salt and pepper as you like.
Cut the cherry tomatoes in half and serve with the avocado creme.

Be sure to prepare the avocado creme right before serving as it tends to turn brown very quickly!
